How It Works
- 1 Harvest ripe cherries
- 2 Remove skin and some pulp
- 3 Leave varying amounts of mucilage on bean
- 4 Dry with mucilage attached (1-3 weeks)
- 5 Turn regularly
Flavor Impact
Between washed and natural. Sweet, balanced acidity, good body. Fruity but cleaner than natural.
