How It Works

  1. 1 Harvest ripe cherries
  2. 2 Place whole cherries in sealed tanks
  3. 3 Ferment without oxygen (24-200+ hours)
  4. 4 Monitor pH, temperature, pressure
  5. 5 Remove cherries and dry whole
  6. 6 Hull after drying

Flavor Impact

Intense, complex, funky. Wine-like, tropical fruit, sometimes boozy or fermenty. Very distinctive.
